Houmous Platter

For the Houmous

2 garlic cloves
1 tsp sea salt
Juice of 1/2 lemon
1 tsb of tahini paste
1/2 tbs of sesame oil
1/2 tbs of olive oil
1 tsp of smoked paprika
50ml of water

For the Accompaniments

8 new potatoes halved
4 carrots halved length-ways
olive oil
sea salt
Fresh coriander


Wash, scrub and then halve 8 new potatoes. Peel, wash and scrub 4 large carrots, then halve length-ways. Par boil the potatoes and carrots in a large saucepan of salted water for 10 minutes.

Preheat the oven to 180 degrees and once your vegetables are par-boiled, roast them in olive oil for 20 minutes.

Meanwhile, drain and wash 400g of fresh organic chickpeas, add to a blender a long with the remaining ingredients. Blend until smooth – if the mixture becomes too dry then add extra cold water.

Spoon into a large ramekin, dust with smoked paprika to serve. Finally serve your roasted vegetables and mix with two handful of fresh coriander leaves (wash and finely chop your coriander first).

This recipe makes a perfect substantial snack or light lunch!
