Spiced Borlotti Bean Bowl

For the Bean Bowl
400g canned Borlotti beans
1 tbsp Smoked paprika
2 tsp Chili powder
1 tbsp Cayenne powder
1 Garlic clove, crushed.
100ml of fresh water
For the Salsa
4 radishes, finely sliced.
4 shallots, finely sliced.
2 large beef tomatoes
Juice of 1 lime
Vegan friendly tortilla chips, to serve.
Heat a glug of olive oil in a frying pan on a low heat, add
2 tsps. of mild chili powder, 1 tsp of cayenne powder, and 1 tsp of paprika;
stir with a wooden spoon before adding 1 clove of crushed garlic.
Now drain your Borlotti beans from the tin and rinse – tinned Borlotti beans
are already cooked and simply need heating through (do ensure you follow this
recipe with tinned Borlotti beans and not dried). Once rinsed and drained, add
straight to the frying pan. Heat through.
Now, for the salsa: wash, scrub, and finely dice
4 shallots and 4 radishes, add to a large bowl, followed by the juice of one
Season to taste with black pepper and sea salt, add a handful of fresh coriander, stir and set to one
Whilst your Borlotti bean mix is still piping hot, serve
it in a large bowl and carefully spoon your salsa mix on top. Serve with tortilla
Do make sure that your tortilla chips are vegan as many tortilla chips aren’t.
For my dish, I used Chili Heatwave Doritos which you can find in all UK supermarkets.
