Vegan Flapjack Bites
Approx 20 mins | Serves 2
250g of organic oats
75g of vegan butter (I use Pure sunflower spread)
75g of coconut sugar
75 ml of agave nectar
Firstly, preheat the oven to 150 degrees and grease a small baking tray with vegan butter.
Using a large saucepan, melt the vegan butter on a low heat. Once melted add in the coconut sugar and agave nectar, stirring slowly.
Take off the heat and add in the oats a little bit at a time, folding into the mixture so that eventually all the oats are completely covered in syrup.
Spoon out the mixture onto a large chopping board and make your flapjack bites. Squeeze the mixture together tightly so it binds well and you won’t be left with any crumbs or breaks. You’re aiming for the size and shape of a flattened golf ball.
Once you have used up all the mixture, place your flapjack bites onto the baking tray and bake for just ten minutes.
You don’t require anywhere near as much cooking time with this recipe compared to if you’d have made a full tray bake of flapjacks.
Leave to cool for 5 minutes before serving.
